Cozy, warm, and the perfect weeknight meal.

Soup is the perfect remedy for cold weather. Put it all together and just let it simmer. Many are surprisingly filling.


The perfect one pot wonders - SOUP!

I'm all about the one pot wonders. Well, in truth, I love a meal that's complex and comes with many layers of the cooking process. But there are times when you just want to get dinner ready so you can clean up the kitchen and be done with it.

This time of year is the best for these quick meal moments. Soup. Hearty, savory and extremely satisfying.

My all time favorite soup on this earth was my grandmother's vegetable soup. I don't know what it was. I mean, for all intents and purposes, it was so simple. So basic. Green beans, potatoes, cabbage, tomatoes, corn. I can't recall exactly, but I do think she made it with beef (so, not vegetable soup exactly - vegetable beef soup!). I just know that it was so good. We'd pair it with several saltine cracker sleeves. During the cold months, especially, it was perfect. It's a dish that really takes me back to that place in time. I've been wanting to recreate it... see if I can get it just like she made it. From the looks of the photo, the broth was pretty thin. Nothing thick. The broth is a nice complement to the soup - it's not the base. 

There are many soups where a thicker broth might be the thing that sings. Beef stew is a great example. But this warm and comforting veggie soup isn't one of those situations.

Trying out new recipes is kind of my thing. Truth be told, I was gong to make an Instant Pot beef stew for just us. But when I learned we'd be having guests, I thought I might need to up the servings, so I searched for a stove top version and came across the Joyous Apron's version.


It was one part red wine, one part corn starch, and one part pure awesomeness that made this beef stew so perfect. It was even better for leftovers a few nights later!


If you can, find the recipe that works for you - it just clicks - and keep it around. Since I hadn't saved this recipe (instead, I had the Instant Pot recipe saved), I had to go looking for it to post to this blog. Luckily, I found it!

    Amazing Beef Stew from Joyous Apron

As fulfilling as they are tasty.

My eyes are always a little bigger than my stomach. So when I think about soup, I don't typically think of something that'll fill me up and stick with me for long.


But these soups are so filling! Try any of the ones in the slider, or give this really tasty broccoli cheese soup a try!

Broccoli Cheese Soup

This won't take you long. The waiting around part comes in the simmer. But if you'd like dinner on the table in no time, here is the recipe.


One note I will make. I thought about doing this, but ended up not. I would use an immerson blender, or blend half of the soup in a blender, in order to make at least half of the soup creamy instead of chunky with the broccoli. That's just a personal preference, and I might do that with the remaining soup for leftovers!


Ingredients

  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • 3 garlic cloves, chopped
  • ¼ cup all-purpose flour
  • 2 cups whole milk or unsweetened almond milk
  • 2 cups vegetable broth
  • 3 cups chopped broccoli florets
  • 1 large carrot, julienned or finely chopped
  • ½ teaspoon Dijon mustard
  • 8 ounces shredded cheddar cheese, about 2 heaping cups
  • Homemade croutons, for serving, optional (I used store bought)

Directions

  • Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, salt, and several grinds of pepper and cook, stirring, for 5 minutes, or until softened. Stir in the garlic and cook for another minute, then sprinkle in the flour and whisk continuously for 1 to 2 minutes, or until the flour turns golden. Slowly pour in the milk, whisking continuously.
  • Add the broth, broccoli, carrot, and mustard and stir to combine. Simmer for 15 to 20 minutes, or until the broccoli is tender.
  • Gradually add the cheese, stirring after each addition, until all the cheese is melted and the soup is creamy. Season to taste and serve with croutons, if desired.

Tortilla, chicken noodle... whatever it is, make it a great meal for a cozy night with family.

Soups are just perfect. And if you want, add a simple salad or some french bread to the meal - look for that soon on an upcoming blog post! For me, the thing to remember is to make soup and use it as a method to relax, unwind and enjoy your time with your dinner mates. It's well worth it.
